Naturally dried red hibiscus flowers (Hibiscus sabdariffa), also called sorrel, roselle or bissap. Deep red with a refreshing, tart flavour. Used across Africa and the Caribbean for zobo (Nigeria), bissap (West Africa) and sorrel drinks. Drink hot or chilled, with ginger, spices, fruit or sugar to taste.

How to prepare

1. Rinse the flowers well.
2. Put the amount you want in a pot with water and bring to the boil. Let it infuse until the water turns deep red.
3. Strain out the flowers.
4. Add sugar, honey, ginger, spices or fruit to taste. Serve warm, or cool and chill.
