Year-old free-range hen, a mature bird with much denser meat than a broiler raised for three months. It is the kura rosłowa: the bird for proper broth. Cook it longer than a supermarket chicken, for far more flavour. Good in pepper soup, peanut soup, tomato stews and rosół. Leg quarters with a portion of the back (osso-osso).

How to use Hard Chicken

Mature hen is firm and needs a long boil. Simmer or pressure-cook in a seasoned broth for 45–75 minutes, until tender, before adding it to egusi or vegetable soup.

Storage

Keep frozen. Do not refreeze once thawed. If you use part of a pack, put the rest back airtight.
